Catching squid can be an exciting experience, but knowing how to handle and store your catch properly is crucial for ensuring freshness, safety, and quality, especially if you plan to eat them. Proper handling begins the moment you reel them in and continues until you cook or freeze them. Here’s a step-by-step guide on how to handle and store your squid catch effectively.

1. Immediate Handling

  • Kill Quickly: To preserve the quality of the meat, it's important to kill the squid quickly after capture. This can be done by cutting between the eyes to sever the brain, which is the most humane method.
  • Bleed the Squid: Bleeding your squid immediately after capture enhances the flavor and appearance of the meat. Make a shallow cut on the mantle or remove the head to allow the blood to drain out.
  • Keep Cool: Place the squid in a cool environment as soon as possible. Use a slurry of seawater and ice to quickly bring down the body temperature, which helps in slowing down the decomposition process.

2. Cleaning

  • Remove Innards: Pull out the head and the entrails connected to it. Be careful to remove the ink sac without breaking it, unless you plan to use the ink for cooking.
  • Remove the Beak: Find the hard beak in the center of the tentacles and remove it.
  • Peel the Skin: Although squid skin is edible, peeling it off can improve the texture and appearance of the flesh. Gently pull the skin away from the mantle and fins.
  • Rinse Thoroughly: Wash the squid under cold running water to remove any remaining entrails, ink, or residue.

3. Storage for Short-Term Use

  • Refrigeration: If you plan to use the squid within two days, store them in the refrigerator. Place the cleaned squid in a shallow airtight container or wrap them tightly in plastic wrap or aluminum foil to prevent air exposure.
  • Keep Cool: Ensure your refrigerator is at the right temperature, ideally around 32°F (0°C) to keep the squid fresh.

4. Long-Term Storage

  • Freezing: For long-term storage, freezing is the best option. Clean the squid as described above, pat them dry, and place them in freezer-safe bags. Remove as much air as possible from the bags to prevent freezer burn.
  • Label and Date: Mark the bags with the date of freezing. Properly frozen squid can last up to two months without significant loss of quality.

5. Thawing Frozen Squid

  • Refrigerator Thawing: Transfer the frozen squid from the freezer to the refrigerator one day before you plan to use them. This allows them to thaw slowly and safely.
  • Cold Water Thawing: If you need to thaw squid quickly, place them in a sealed plastic bag and submerge the bag in cold water. Change the water every 30 minutes to maintain a safe temperature. Use the squid immediately after thawing.
